Hi there! My cakes tend to be more on the dense side rather than light and fluffy, but it shouldn’t be too dense and should rise almost to the top of an the cake pans. Overly dense cakes can be from overmixing the cake batter once the flour is added (it develops too much gluten) or not using room temperature ingredients so the cake batter doesn’t emulsify properly.

It came out awful and dense, I thought that sounds like way too much milk to put in a cake but I didn’t trust my instincts. Just a disappointing waste of ingredients :/

Hi Kelly! I am so happy to hear you love my recipes, thank you! I would steep some lavender in with the syrup or just do a lavender syrup instead of the earl grey. You can also steep some in the Earl Grey milk too. Depends on how strong a flavour you want. It can be a little overpowering I find. I’ll talk to my web developer about a 1.5x option! 🙂

Firstly, I have made 20+ of your cakes and they are the most scrumptious desserts! I want to incorporate lavender (my sister’s special request) into this Earl Grey cake. I know lavender can be tricky and don’t want it to overpower the Earl Grey. Would you recommend adding it to the soak, buttercream or both? On a side note, can you please add a 1.5x conversion as I make 3 8” cakes and have found that to be the magic number?

Hi Krishna! Not really. Making it eggless would require significant changes to the recipe and frosting. I’d recommend looking for an eggless cake recipe and infusing that with earl grey tea.

Hi Emily! So happy you loved it. The recipe as-is will work as cupcakes. You just need to reduce the baking time. Start checking at 15mins or so. The recipe should make 18-24 depending on size.
