I think both drips will hold out fine. For a white choc drip you use a higher ratio of chocolate to cream than with dark choc so the texture should be the same. I think flavour wise either would go fine 🙂

Thanks Olivia. I thought this must be the case as same result both times. If I may ask another question. I was considering adding a dark chocolate ganache drip just around the top rim of cake, would then not put toasted coconut on base. Flavour wise thought this should be ok and as I am trialing for a birthdy party in early January – very hot time of year – thought dark choc would hold up better than white choc drip. Any thoughts? Hi Helen! The layers are slightly thinner here than most of my cakes as it is a large 3 layer cake and I wanted a better ratio btwn filling and cake. The layers should bake up to be about 1″ tall in 8″ pans. In your 20cm pans they may be slightly taller than that. If you want taller layers you can either bake them in two pans vs three or double the recipe.

Have just made these cakes for second time and still did not rise as high as I thought they would. Using 20cm x 5cm cake tins, weighed batter so equal in each tin and were cooked in about 25mins in 160 deg oven. I thought baked cakes would come nearly to top of tin or I am mistaken? Am trialing cake for a birthday celebration in January. Previous bake tasted ok (used different frosting) but dissapointed with height. Any suggestions?

The recipe says it serves 16 but I know they cut cake portions smaller at parties. Do you know if this would go much further than 16? I’m worried it won’t be big enough… although as I write this, I think I’m going to have to make 2 cakes haha!

I agree your website ads are over the top. Even if you jump to recipe, the pop-up ads pop you out of the recipe and you have to start over… this can be scary when you lose your place in the recipe. It would be nice if you could “print to pdf” so that it can be frozen digitally off site
