Hi Ursula! Yes, but you’ll need to bring it completely to room temp and rewhip before use. If just the day before I would leave it out at room temperature but make sure to rewhip it before you use it.

Way too much butter in this buttercream. It is extremely unbalanced. The cake is rich and moist. I mean 2 cups of butter on top of the 1/2 c in the caramel. It’s like eating a half stick of butter per slice and you can definitely taste the butter.

Hi Stephanie! Converting pan sizes is always tricky. Here are some sites I use as a guideline:

Based on that I would 2.25x for three 9″ layers. Or if you dont mind thinner layers you can 2x for ease. Be sure to reduce the baking time if you do.
