This. Is. Amazing. What a fabulous recipe. My daughter and I have added it to our Pantheon of Greatest Cakes. The raspberry/almond combination is superb! The only change I made was to add raspberry preserves instead of the freeze-dried raspberries (I couldn’t find any). Thank you, thank you! I’m inspired to try more of your recipes!

Hi Anna. I’m not sure how you burn and underbake a cake at the same time. Did you use the correct oven temperature? If the cakes didn’t rise I’d check to make sure your baking powder is fresh and active still.

If I could give this recipe 0 stars I would. I copied everything down to the gram, the exact same for literally everything. They didn’t rise, were burnt and undercooked at the same time. And this absolutley wasn’t me literally everything was the same. Beyond dissapointing

Hi Ally! I haven’t tried this myself so I can’t say for sure. It is a bit lighter due to the almond flour. If you try it be sure to toss the cherries in flour first and fold them in at the end.

Would it work adding fresh cherries to the cake batter or is the cake batter too light and won’t rise properly?

I have made this cake several times for dinners and events and it is always a hit! Sometimes I make an armaretto frosting, sometimes I make the raspberry. Either way it is a declious cake and rarely is there leftovers!

Hi Kelly! I talk about this in the Tips section of the post. For three 8″ pans 1.5x the recipe. And yes, flavour wise that will work fine.

And thinking of covering with white chocolate buttercream and flaked almonds do you think that will work? ….Thanks
