Hi Maggie! My recipe does not need fixing. The custard should be perfectly light and creamy. Perhaps something went wrong on your end? The recipe says 2 Tbsp of cornstarch, not 3. Glad you liked the cake.

The cake was good, nice and fluffy. That custard recipe needs some fixing. 3 tbsp of cornstarch is wayyyyyy too much for 1 cup milk/1 egg yolk. I should’ve known better cuz I’ve made custard a lot and something seemed off. It came out soooo thick. Almost like glue.

Hi Amy! It should work as is in a 9×13 pan but if you want to be safe you can 1.5x the recipe and make cupcakes with any extra.

Hi Freya! Do you have a hand mixer? If so for the cake that should be fine. For the frosting it would be a challenge though. I’d recommend going with something like ermine or German buttercream, but you’d still need a hand mixer. For each of these I would make the pudding/custard with coconut milk instead.
